Makes a dozen ~50g shortbreads, I usually bake mine in a muffin tray

Ingredients

  • 200g Clarified Butter, (browned is best, the less water in it the better)
  • 100g Icing Sugar
  • 250g White Flour
  • Pinch Salt
  • 10g Fresh Parsley
  • 10g Fresh Sage
  • 10g Fresh Rosemary
  • 10g Fresh Thyme

Directions

  1. Preheat oven to 170°C (fan-forced)
  2. Toast herbs in a pan and grind into powder
  3. Beat Butter, Sugar, and powdered herbs together until homogenous
  4. Add salt and flour, and knead until a crumbly dough forms
  5. Separate dough into disks weighing roughly 50g.
  6. Bake for 20 minutes or until golden brown on the edges
  7. Turn out to cool on a wire rack
