Makes a dozen ~50g shortbreads, I usually bake mine in a muffin tray

Ingredients

  • 200g Clarified Butter, (browned is best, the less water in it the better)
  • 100g Icing Sugar
  • 250g White Flour
  • Pinch Salt
  • 10g Fresh Parsley
  • 10g Fresh Sage
  • 10g Fresh Rosemary
  • 10g Fresh Thyme

Directions

  1. Preheat oven to 170°C fan-forced
  2. Toast herbs in a pan and grind into powder
  3. Cream Butter, Sugar, and powdered herbs together until homogenous
  4. Add salt and flour and knead until a crumbly dough forms
  5. Pat 50g of dough into each divit of muffin tray
  6. Bake for 20 minutes or until golden brown on the edges
  7. Turn out to cool on a wire rack
