Scarborough Shortbreads
Makes a dozen ~50g shortbreads, I usually bake mine in a muffin tray

Ingredients
- 200g Clarified Butter, (browned is best, the less water in it the better)
- 100g Icing Sugar
- 250g White Flour
- Pinch Salt
- 10g Fresh Parsley
- 10g Fresh Sage
- 10g Fresh Rosemary
- 10g Fresh Thyme
Directions
- Preheat oven to 170°C fan-forced
- Toast herbs in a pan and grind into powder
- Cream Butter, Sugar, and powdered herbs together until homogenous
- Add salt and flour and knead until a crumbly dough forms
- Pat 50g of dough into each divit of muffin tray
- Bake for 20 minutes or until golden brown on the edges
- Turn out to cool on a wire rack
