Ingredients

Cake

  • 120g Butter
  • 450g Dark Brown Sugar
  • 2 Large Eggs
  • 500mL Filmjölk (or Buttermilk)
  • 2tsp Vanilla Extract
  • 2tsp Baking Soda
  • 360g Plain White Flour
  • 6tsp Cinnamon
  • 3tsp Nutmeg
  • 2tsp Ginger
  • 2tsp Mace
  • 1tsp Clove
  • 1tsp Cardamom

Topping

  • 40g Melted Butter
  • 100g Dark Brown Sugar
  • 1tsp Cinnamon
  • 30mL Rum or Brandy

Directions

  1. Preheat the oven to 180°C (fan-forced)
  2. Grease and flour a cake tin
  3. Beat the butter and brown sugar together, adding the eggs one at a time until smooth
  4. Add in the filmjölk and vanilla and continue to beat until smooth
  5. Mix in the dry ingredients until fully combined
  6. Scrape the batter into the cake tin
  7. Bake for roughly 45 minutes, until it is stable when wobbled
  8. Whilst the cake is in the oven stir together the topping ingredients
  9. Spead the topping on the cake and return it to the oven for an additional 10-15 minutes
